Sweet potato is a starchy, sweet-tasting root vegetable from the bindweed family. They are most commonly orange in colour but some varieties can be white, yellow or even purple. You can eat sweet potatoes with or without the skin, and the leaves are also edible.

Nutritional value of sweet potato

Sweet potatoes contain good range of vitamins and minerals including iron, calcium, selenium, and are an excellent source of several B vitamins and vitamin C. They are a rich source of fiber also.

One of the most important nutritional values of sweet potato is that they are high in antioxidants known as beta-carotene, which converts to vitamin A once eaten.
Cut and steam the sweet potato with the skin on. Always good with some lettuce, firstly wash the lettuce add a drizzle of olive oil dressing just before serving.
