Vegan ice cream recipe for mint choc chip matcha nice cream
For 1 bowl
1/4 cup coconut milk
1/2 tsp peppermint extract (or spearmint for a softer flavour)
2 frozen bananas, in chunks
1/4 cup fresh mint leaves
2 tsp matcha powder
2 tbsp cacao nibs + 1 tbsp for garnish
- Blitz the ingredients together in a food processor or blender, adding more milk if necessary.
