A biscuit base has the power to make everything ok. Not just for cheesecake, it can form the base of many quick and easy desserts.
How to make a biscuit base
First you’re gonna need some biscuits. And some butter. Salted is nice but unsalted (sweet) butter gives you more control. If you want to aim for that sweet/salty effect then you can add in a pinch of flaked sea salt to your liking.
Recipe for biscuit base
125g unsalted butter, melted
- Blitz the biscuits in a food processor until they look something like damp sand.
- Put the crumb in a bowl and stir in the melted butter.
- Press into a tin and put in the fridge to set.
- Alternatively pile the crumb on a tray and leave to set in the fridge. Once solid you can break it up as coarse or fine as you like.
Ideas for desserts using biscuit crumb base
- Pile into glasses with whipped cream, custard and fruit. Try using our angel cookies for a colourful version to please the kids.
- Or pile with chocolate ganache for a freestyle chocolate tart.
- Layer with lemon curd and softly whipped cream cheese.
- Mix with whipped cream, strawberries and mini meringues just like Eton Mess.
- Switch out a pastry base for a biscuit crumb base. Reinvent the classics such as lemon meringue pie.
And of course there’s the original crumb base desserts like banoffee pie, key lime pie, and even peanut butter pie.
